Recipe - Barbecue time!

Are you basically vegetarian? Then this recipe is an absolute must at your next barbecue party!

Halloumi (cheese) grill skewers with a refreshing lemon-herb marinade

 

Ingredients:

For 4 skewers

For the skewers

  • 4 sausage skewers
  • 250 g halloumi (grilled cheese)
  • 200 g of cocktail tomatoes
  • 2 whole peppers

For the marinade

  • 2 tbsp coconut oil
  • parsley
  • coriander
  • 1 untreated lemon
  • 1 pinch of salt
  • pepper

Preparation:

  1. Cut the halloumi into large cubes.
  2. Wash and core the peppers and cut into large pieces. Separate the cocktail tomatoes from the stem and wash them.
  3. Put the halloumi, tomatoes and peppers alternately on the skewers.
  4. Finely chop the parsley and coriander and mix with a little salt and coconut oil in a small bowl. Use a grater to rasp off the peel of the untreated lemon and mix with the rest of the marinade.
  5. Brush the skewers with the marinade and place on the grill.
  6. Grill on both sides for about 4 minutes.
  7. Dip the skewers in any sauce that you like and enjoy.
