Korianterilla on voimakkaan vihreät, hienosti höyhenpeitteiset lehdet, se kasvaa jopa 60 cm korkeaksi ja kukkii lukuisia valkoisia kukkia heinä- ja elokuussa. Korianteri on runsas eteeristen öljyjen lähde. Eteerinen korianteriöljy uutetaan kasvin siemenistä höyrytislauksella.

Kellertävällä öljyllä on mausteinen, aromaattinen, lämmin ja erittäin aistillinen tuoksu, joka muistuttaa hieman anista.
